Basbousa is a baked semolina based cake which is soaked in sugar syrup. And in today’s recipe I have filled/layered the basbousa with thick cream filling flavoured with rose water and orange blossom water and is soaked in sugar syrup… There are so many ways basbousa is prepared some recipe add coconuts, almonds ,yoghurt, and for the fudge like taste condensed milk os also added… Today I have prepared with milk and its eggless …You can also use any type basbousa prepared with your own favourite ingredients and layer it with cream filling and bake.. Here I have baked these in small moulds and for me it took exactly 5 moulds yoy can also bake together in a square pan then cut and serve it…

- 3/4 cup semolina
- 1/4 cup flour
- 1/4 cup sugar
- 1/2 tsp baking powder
- 1/4 +2 cup+tbsp vegetable oil
- 1/2 cup milk
- 1 cup sugar
- 1 cup water
- 1 tbsp rose water
- lemon juice
- 2 cup milk
- 1/2 cup milk powder
- 2 tbsp cornflour
- 2 tbsp fresh cream
- 2 tbsp orange blossom water/rose water

- Boil milk and milk powder then add sugar ,cornflour and cook until it is thick then add fresh cream and orange blossom water and keep aside to cool.
- Mix together semolina , flour, baking powder, sugar then add milk , vegetable oil and hive it a good mix without any lumps.
- Grease the baking mould with butter and pour half of the mix then layer it with cream filling then add remaining batter ... Then top it with sliced almonds .Here I have used small moulds.
- Bake at pre heated oven for 30 minutes @180°c
- Boil water and sugar until sugar is dissolved then add lemon juice and rose water..pour this on top of the baked cake allow it to soak for 1 hour and serve with crushed pistachio on top
oh my, I love basbousa but thi s is the first time with a filling inside!!
